Ingredients

Scale
  • 46 oz prosciutto
  • 46 oz Genoa salami
  • 46 oz pepperoni
  • 34 oz capicola (optional)
  • 46 oz aged cheddar
  • 46 oz brie
  • 46 oz gouda
  • 23 oz blue cheese crumbles
  • 1 box assorted crackers
  • 1 small bag breadsticks or grissini
  • 1 bag pita chips or crostini
  • 1 cup red grapes
  • 1/2 cup dried figs or apricots
  • 1 cup fresh berries (strawberries, raspberries, or blackberries)
  • 1 cup cherry tomatoes
  • 1/2 cup fig jam or honey
  • 1/4 cup whole-grain mustard
  • 1/2 cup olives (Kalamata and Castelvetrano)
  • 1/4 cup cornichons
  • A few sprigs fresh rosemary or thyme
  • 1/2 cup nuts (Marcona almonds or candied pecans)

Instructions

  1. Prep Your Ingredients (5 minutes): Take cheeses out of fridge 30 minutes before starting. Wash and dry grapes, berries, and cherry tomatoes. Slice baguette or crostini if using.
  2. Place Your Bowls (2 minutes): Arrange small bowls for dips, olives, and nuts on the board first. For a football helmet board, place them in the center or along the back edge.
  3. Add the Cheeses (5 minutes): Place cheese wedges and crumbles around the bowls, spacing them out evenly. Cut brie into large wedges. Cube cheddar and gouda into bite-sized pieces.
  4. Layer the Meats (5 minutes): Fold prosciutto into loose ribbons or rosettes. Roll salami and pepperoni into cylinders. Place in clusters near the cheeses.
  5. Fill the Gaps with Crackers & Bread (3 minutes): Fan out crackers, breadsticks, and pita chips in empty spaces. Create ‘cracker rivers’ flowing from one section to another.
  6. Add the Fruits & Veggies (3 minutes): Scatter grapes, berries, figs, and cherry tomatoes in small clusters around the board. Group them for visual impact.
  7. Garnish & Finish (2 minutes): Tuck in fresh rosemary or thyme sprigs. Sprinkle nuts in remaining empty spots. Drizzle honey over brie or blue cheese.

Notes

Let cheeses sit at room temperature for 30 minutes before serving for best flavor. Use the ‘ribbon’ fold for meats and the ‘river’ method for crackers to create a visually appealing board. Don’t overcrowd; leave some negative space. Adjust ingredients based on your crowd’s preferences.
