  • 6 ounces manchego, thinly sliced
  • 6 ounces prosciutto, thinly sliced
  • 4 ounces sopressata, thinly sliced
  • 4 ounces genoa salami, sliced
  • 2 large Honeycrisp apples, cored and sliced
  • 2 large Bartlett pears, cored and sliced
  • 810 fresh figs, halved
  • 1/2 cup pomegranate seeds
  • 1 cup red grapes, small clusters
  • 3 tablespoons honey
  • 1/2 cup fig jam
  • 1 cup mixed nuts (candied pecans and Marcona almonds)
  • 810 ounces crackers (water crackers and rosemary olive oil crackers)
  • Fresh rosemary sprigs for garnish

Instructions

  1. Prepare your board: Place your wooden board on a flat surface. Optionally line with parchment paper.
  2. Place the small bowls: Position bowls for honey, fig jam, and pomegranate seeds on the board, spreading them out to create natural sections.
  3. Add the cheeses: Place the brie whole in one corner. Fan out the aged cheddar wedges in a line. Place the goat cheese log in another section, and arrange the manchego slices in a small pile.
  4. Layer the meats: Fold the prosciutto slices into loose ribbons and place them near the brie. Layer the sopressata and salami slices in overlapping rows.
  5. Add the fruits: Fan out the apple and pear slices in curved lines around the board. Place the fig halves in small clusters. Scatter the red grape clusters in any empty spaces. The pomegranate seeds go in their bowl.
  6. Fill with accompaniments: Sprinkle the mixed nuts in the remaining gaps. Place crackers in small stacks around the edges. Drizzle honey over the brie and goat cheese. Add a small spoon for the fig jam.
  7. Garnish and finish: Tuck fresh rosemary sprigs between the cheese and fruit. Ensure the board looks abundant but not crowded.
  8. Serve immediately: Best served within an hour of assembling. Slice apples and pears just before serving to prevent browning.

Take cheeses out of refrigerator 30 minutes before serving. Slice apples about 1/4 inch thick to prevent browning. For prep ahead, toss apple slices in lemon juice. Avoid overcrowding the board. Keep crackers sealed until last minute to prevent sogginess.
