Ingredients

Scale
  • 1 cup creamy peanut butter (Skippy natural or Jif recommended)
  • 1/2 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups semi-sweet chocolate chips (Ghirardelli recommended)
  • 1 tablespoon coconut oil or vegetable shortening
  • 1/2 cup pretzel twists, roughly crushed
  • 1/2 cup candy corn (Brach’s recommended)
  • 1/3 cup Halloween-themed M&Ms
  • 1/4 cup candy eyeballs
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking sheet with parchment paper, leaving overhang on the sides.
  2. In a large mixing bowl, beat together the softened butter and brown sugar until light and fluffy, about 2-3 minutes with a hand mixer on medium speed.
  3. Beat in the peanut butter until fully incorporated, then add the egg and vanilla extract. Mix until smooth and creamy.
  4. In a separate medium bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or stirring with a spatula until just combined. Do not overmix.
  6. Transfer the cookie dough to the prepared baking sheet. Press it into an even layer about 1/4-inch thick using your hands or the back of a spatula.
  7. Bake for 12-15 minutes, or until the edges are golden brown and the center looks set but still slightly soft. Do not overbake.
  8. Remove the pan from the oven and place it on a wire cooling rack. Let the cookie base cool completely, about 30-40 minutes.
  9. While the base is cooling, melt the semi-sweet chocolate chips and coconut oil together in a small saucepan over low heat, stirring constantly, or microwave in 30-second bursts, stirring between each, until fully melted.
  10. Once the cookie base is completely cool, pour the melted chocolate over the top. Use a spatula to spread it into an even layer, reaching all the way to the edges.
  11. While the chocolate is still wet, sprinkle the crushed pretzels, candy corn, Halloween M&Ms, and candy eyeballs evenly over the surface. Press them in gently with your fingers. Finish with a light sprinkle of flaky sea salt if using.
  12. Place the pan in the refrigerator for at least 1 hour, or until the chocolate is completely firm and set.
  13. Once set, lift the bark out of the pan using the parchment overhang. Place it on a cutting board and break it into irregular pieces with your hands or a sharp knife.

Notes

For the best texture, use old-fashioned rolled oats, not quick oats. Avoid overbaking the cookie base—it should look slightly underdone when removed from the oven. The bark can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months. The flavors improve after a day or two.
