  • 24 ounces (about 3 cups) your favorite marinara sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes (optional)
  • 8 ounces cream cheese, softened to room temperature
  • 2 cups shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large round loaf of crusty bread (sourdough or Italian)
  • Additional bread cubes, crackers, or tortilla chips for dipping
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Brown the meatballs (optional but highly recommended): Heat a large skillet over medium-high heat. Add a drizzle of olive oil, then add the frozen meatballs in a single layer. Cook for 5-7 minutes, turning occasionally, until browned on all sides. Deglaze with a splash of marinara and scrape up browned bits.
  2. Prepare the slow cooker: Lightly grease the inside of your slow cooker with non-stick spray or a little olive oil.
  3. Layer the meatballs: Place the browned meatballs in the bottom of the slow cooker. Pour the marinara sauce over them, then sprinkle the Italian seasoning, garlic powder, and red pepper flakes. Gently stir to coat the meatballs evenly.
  4. Add the cream cheese: Cut the softened cream cheese into small cubes and scatter them over the meatballs. Do not stir yet.
  5. Add the shredded cheeses: Sprinkle the shredded provolone, mozzarella, and Parmesan evenly over the top. Do not stir.
  6. Cook low and slow: Cover the slow cooker and cook on LOW for 2-3 hours, or on HIGH for 1-1.5 hours, until the cheese is fully melted and bubbly and the meatballs are heated through.
  7. Stir and adjust consistency: Once everything is melted, give the dip a good stir. If too thick, add a splash of warm marinara or a little pasta water. If too thin, let it cook uncovered for another 15-20 minutes.
  8. Prepare the bread bowl: While the dip cooks, cut the top off the round loaf of bread. Hollow out the inside, leaving a 1-inch thick shell. Cut the removed bread into cubes for dipping. Toast the bread cubes on a baking sheet at 350°F for 5-7 minutes, or until golden and crisp.
  9. Transfer and serve: Carefully spoon the meatball dip into the hollowed bread bowl, or serve directly from the slow cooker on the ‘warm’ setting. Sprinkle with fresh parsley or basil. Arrange the bread cubes, crackers, and chips around the bowl.

Notes

Don’t skip browning the meatballs for best flavor. Shred cheese from a block for smoother melt. Keep dip on ‘warm’ setting during party. Can be assembled (without cheese) up to 24 hours in advance.
