  • 2 large yellow onions, thinly sliced
  • 8 cheese slices (cheddar or American)
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 8 hamburger buns (brioche preferred)
  • Leaf lettuce (washed and dried)
  • Tomato slices
  • Pickles
  • Cooked bacon strips
  • Condiments: ketchup, mustard, mayo

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the thinly sliced onions with 1 tablespoon olive oil and a pinch of salt, then spread them along one edge of a large rimmed sheet pan.
  3. In a large bowl, combine the ground beef with Worcestershire sauce, garlic powder, salt, and pepper. Mix gently by hand to avoid overworking.
  4. Divide the beef mixture into 8 equal portions (about 4 ounces or 113 grams each). Shape each into a patty roughly 3 inches (7.5 cm) wide and about ¾-inch (2 cm) thick, making a slight indentation in the center.
  5. Place the patties on the sheet pan next to the onions, leaving space between each for even cooking.
  6. Drizzle the remaining 1 tablespoon olive oil over the patties.
  7. Bake in the preheated oven for 15–18 minutes until burgers reach an internal temperature of 160°F (71°C) for medium doneness.
  8. About 2 minutes before the end of cooking, place a slice of cheese on each patty and return to the oven to melt.
  9. Remove from oven and tent the burgers with foil; let rest for 5 minutes.
  10. Toast buns cut-side up on a separate pan or under the broiler for 1-2 minutes until lightly golden.
  11. Arrange patties, caramelized onions, buns, and toppings on a platter or buffet-style table for assembly.

Notes

If onions cook too fast, push them to the cooler side of the pan or reduce oven temperature slightly. Resting burgers for 5 minutes is essential to keep them juicy. Use a rimmed sheet pan to catch juices and caramelized bits. For gluten-free, swap buns for gluten-free versions or lettuce wraps. For dairy-free, use vegan cheese or skip cheese.
