Savory Crockpot Ham Dinner with Brown Sugar and Pineapple

A simple and comforting slow cooker ham recipe featuring a sticky, sweet-savory glaze made from brown sugar and pineapple. Perfect for busy weeknights or family gatherings.

  • 3 to 4 pounds fully cooked ham, bone-in or boneless
  • 1 cup packed brown sugar (200 g)
  • 1 can (20 ounces) canned pineapple slices, drained
  • 1/2 cup pineapple juice (120 ml), from canned pineapple or fresh
  • 2 tablespoons yellow mustard (30 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1/4 teaspoon ground cloves (optional)
  • Freshly ground black pepper, to taste
  • Optional garnishes: chopped fresh parsley or rosemary sprigs

Instructions

  1. Remove the ham from packaging. Trim off thick skin or tough fat, leaving a thin layer of fat. Pat dry with paper towels.
  2. In a medium bowl, combine brown sugar, pineapple juice, yellow mustard, apple cider vinegar, and ground cloves if using. Stir until smooth and glossy.
  3. Spray the crockpot insert lightly with nonstick spray or brush with oil. Place half of the pineapple slices (5-6 slices) at the bottom.
  4. Set the ham on top of the pineapple slices, flat side down if a half ham. Brush or pour half of the glaze evenly over the ham, coating the sides. Reserve remaining glaze.
  5. Arrange the rest of the pineapple slices on top of the ham. Pour the leftover glaze over everything.
  6. Cover and cook on low for 4 to 6 hours, until ham is heated through and glaze is bubbling and caramelized. Avoid lifting the lid during cooking.
  7. About 15 minutes before serving, baste the ham with the juices in the crockpot. Turn off heat and let rest uncovered for 10 minutes to thicken glaze.
  8. Transfer ham to a cutting board. Slice against the grain into 1/4-inch thick pieces. Spoon pineapple and glaze over each serving.

Notes

Do not overcook the ham as it is fully cooked; cook low and slow to keep moist. Use fresh pineapple juice if possible. Brush glaze on ham for even caramelization. Avoid lifting lid during cooking to retain heat and moisture. Let ham rest uncovered before slicing to thicken glaze. If glaze thickens too much or burns, add a splash of water or pineapple juice to loosen.
