  • 2 medium russet potatoes, scrubbed clean
  • 2 tablespoons olive oil or butter (1 tablespoon per potato)
  • Kosher or sea salt, to taste
  • 1 cup shredded cheddar cheese (about 1/2 cup per serving)
  • 4 tablespoons sour cream (about 2 tablespoons per potato)
  • Bacon bits, cooked and crumbled (optional)
  • Green onions or chives, thinly sliced
  • Freshly ground black pepper, to taste
  • Optional extras: diced tomatoes, sautéed mushrooms, jalapeños, avocado slices, leftover chili

Instructions

  1. Wash and scrub 2 medium russet potatoes thoroughly. Pat dry with a towel. Use a fork to poke each potato about 6-8 times all around to release steam during cooking.
  2. Rub each potato with about 1 tablespoon of olive oil or softened butter, coating the skin evenly. Sprinkle kosher salt all over the skin.
  3. Place the potatoes on a microwave-safe plate with space between them. Microwave on high for about 5 minutes. Flip the potatoes and microwave for an additional 4-5 minutes. Test doneness by inserting a fork or skewer; it should slide in easily.
  4. Let the potatoes rest for 2 minutes. Carefully slice each potato lengthwise down the center and fluff the insides gently with a fork to create a bed for toppings.
  5. Set out bowls with shredded cheddar, sour cream, bacon bits, chopped green onions, and other desired toppings. Invite everyone to customize their own potato.

Notes

Poke holes in potatoes to prevent explosions in the microwave. Flip potatoes halfway through cooking for even softness. Let potatoes rest after microwaving for fluffier texture.
