A quick and easy recipe featuring a smoky ham steak glazed with a sweet, tangy mixture and topped with caramelized pineapple, perfect for a cozy dinner for two.

  • 8 ounces ham steak, bone-in or boneless, preferably smoked
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/8 teaspoon ground cloves (a pinch)
  • 1 cup fresh pineapple, cut into rings or chunks (about 150 grams)
  • 1 tablespoon unsalted butter
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or cilantro

Instructions

  1. Prepare the glaze: In a small bowl, whisk together brown sugar, honey, Dijon mustard, apple cider vinegar, and ground cloves until smooth. Set aside.
  2. Preheat your oven broiler while cooking the ham and pineapple.
  3. Caramelize the pineapple: Heat butter in a non-stick skillet over medium heat. Add pineapple pieces and cook 3-4 minutes per side until golden brown and caramelized, turning carefully with tongs. Remove and set aside.
  4. Sear the ham steak in the same skillet over medium-high heat for 2-3 minutes per side until lightly browned.
  5. Brush the ham with the prepared glaze, coating both sides generously. Return to the pan for about 1 minute to let the glaze start to set.
  6. Place the ham on a baking sheet or ovenproof dish. Arrange the caramelized pineapple on top or alongside. Brush any remaining glaze over the pineapple.
  7. Broil for 3-5 minutes, watching closely to avoid burning. The glaze should bubble and caramelize, and pineapple edges should be slightly crisp.
  8. Remove from oven and let the ham rest for 2 minutes. Sprinkle with freshly ground black pepper and garnish with chopped parsley if desired. Serve immediately.

Notes

Keep the oven door slightly open while broiling to prevent the glaze from burning. Use medium heat to caramelize pineapple to avoid burning sugars. Pat ham dry before searing for better browning. The glaze can be made ahead and stored in the refrigerator for up to a day.
