  • 2 ribeye or New York strip steaks, about 8 oz (225 g) each, 1 to 1.5 inches thick
  • Coarse kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, preferably European style
  • 3 cloves garlic, minced or thinly sliced
  • 1 teaspoon fresh thyme or rosemary leaves (optional)
  • 1 tablespoon olive oil for brushing steaks

Instructions

  1. Bring steaks to room temperature for 10-15 minutes.
  2. Pat steaks dry with paper towels, brush both sides lightly with olive oil, then season generously with kosher salt and freshly ground black pepper.
  3. Preheat grill to high heat (450-500°F or 230-260°C). If using charcoal, wait until coals are glowing red with a light layer of ash.
  4. Grill steaks for about 4-5 minutes per side for medium-rare, depending on thickness. Use tongs to flip and avoid moving steaks around.
  5. Check doneness with a meat thermometer: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  6. Remove steaks from grill and rest covered loosely with foil for 5-7 minutes.
  7. While steaks rest, melt butter in a small skillet over medium heat. Add minced garlic and fresh herbs if using. Stir frequently and cook until butter turns golden brown and smells nutty (about 3-4 minutes). Remove from heat immediately.
  8. Slice steaks against the grain, drizzle with browned butter garlic sauce, and serve immediately.
