Peeps S’mores Bark is a festive, easy-to-make Easter treat featuring layers of creamy chocolate, crunchy graham crackers, and colorful marshmallow Peeps. It’s a show-stopping dessert that’s perfect for parties, gifting, or making with kids.

  • 12 ounces semi-sweet chocolate chips
  • 6 ounces milk chocolate chips
  • 68 whole graham cracker sheets, broken into bite-size pieces (about 1 cup)
  • 1 package (10-15) Peeps marshmallow chicks or bunnies (any color or shape)
  • Pastel sprinkles (optional)
  • 2 ounces white chocolate chips, melted (optional, for drizzling)
  • Mini chocolate chips or crushed M&M’s (optional, for topping)

Instructions

  1. Line a 10×15-inch rimmed baking sheet with parchment or wax paper, letting some hang over the sides for easy lifting.
  2. In a microwave-safe bowl, combine semi-sweet and milk chocolate chips. Microwave in 30-second bursts, stirring each time, until smooth and glossy (about 1½–2 minutes total). Alternatively, melt in a double boiler over gently simmering water.
  3. Pour two-thirds of the broken graham crackers into the melted chocolate and gently stir to coat. Reserve the rest for topping.
  4. Quickly pour the chocolate-graham mixture onto the prepared baking sheet. Use a spatula to spread it into an even rectangle about ¼ inch thick.
  5. Immediately press remaining graham cracker pieces gently into the wet chocolate. Arrange Peeps in rows on top, gently pressing so they stick but don’t flatten.
  6. Add optional toppings: sprinkle with pastel sprinkles, mini M&Ms, or drizzle with melted white chocolate.
  7. Transfer the baking sheet to the refrigerator for 30–45 minutes, until the chocolate is completely firm.
  8. Optional: For toasted Peeps, place the bark under the broiler for 30–45 seconds before chilling, just until the marshmallows start to brown lightly. Watch closely.
  9. Once set, lift the bark out using the parchment paper edges. Use a sharp knife to cut into pieces, or snap with your hands.

Notes

Use good quality chocolate for best results. Melt chocolate slowly to avoid seizing. Don’t overload with toppings or the bark won’t set evenly. Chill thoroughly before breaking. For gluten-free or dairy-free versions, substitute appropriate graham crackers and chocolate. Toast Peeps under the broiler for a classic s’mores flavor, but watch closely to avoid burning.
