Instructions

  1. Gently rinse 1 pound (450 grams) of fresh strawberries and pat them dry with paper towels. Let them air dry completely for about 30 minutes.
  2. In a microwave-safe bowl, combine 8 ounces (225 grams) of paleo dark chocolate chips and 1 tablespoon of melted coconut oil. Microwave in 20-second bursts, stirring well after each, until smooth and glossy. Alternatively, use a double boiler on low heat for a creamier melt. Stir in 1 teaspoon of pure vanilla extract if using.
  3. Holding each strawberry by the stem or using a fork, dip it into the melted chocolate, swirling to coat evenly. Let the excess drip off before placing it on a parchment-lined baking sheet. Gently twist the berry as you lift it out of the chocolate for a clean finish.
  4. If desired, sprinkle a tiny pinch of sea salt or your favorite nut topping immediately after dipping.
  5. Allow the strawberries to sit at room temperature for about 15 minutes to firm up. For quicker setting, place the tray in the refrigerator for 10-15 minutes, but avoid leaving them too long to prevent sogginess.
