  • 1 1/2 lbs sirloin steak, cut into 1-inch cubes (ribeye or NY strip works too)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp smoked paprika (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • For Classic Garlic Aioli:
  • 1/2 cup mayonnaise
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • Pinch of salt & pepper
  • For Spicy Sriracha Mayo:
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha sauce
  • 1/2 tsp lime juice
  • For Herb Yogurt Dip:
  • 1/2 cup Greek yogurt (plain, full-fat)
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • Pinch of salt & pepper

Instructions

  1. Pat the steak dry with paper towels and cut into 1-inch cubes.
  2. In a mixing bowl, toss steak cubes with Worcestershire sauce, olive oil, salt, pepper, and smoked paprika. Let marinate for 10 minutes at room temperature.
  3. In a small saucepan over low heat, melt the butter. Add minced garlic and thyme; cook gently until fragrant (about 2 minutes), without browning the garlic.
  4. Heat a large cast iron skillet over medium-high until hot. Add a splash of oil to prevent sticking.
  5. Place steak cubes in a single layer in the skillet. Sear for 1-2 minutes per side until browned and crusty. Work in batches if needed. Transfer cooked bites to a plate and tent with foil.
  6. Return all steak bites to the skillet. Pour the garlic butter over and toss to coat. Cook for an additional 1 minute until warm and glossy. Sprinkle with fresh parsley.
  7. For each dipping sauce, combine all ingredients in a small bowl and whisk until smooth. Adjust seasoning to taste. Cover and chill until serving.
  8. Transfer steak bites to a platter, spoon extra garlic butter over the top, and serve hot with dipping sauces on the side.

Notes

For best results, use a hot pan and avoid overcrowding to ensure a good sear. Pat steak dry before cooking. Toss steak bites in garlic butter after searing to prevent burning. Dipping sauces can be made ahead and refrigerated. For gluten-free, check Worcestershire and mayo brands. Dairy-free butter and coconut yogurt can be substituted. Leftovers keep well and can be reheated in a skillet or microwave.
