  • 2 medium fresh green apples (about 10.5 oz / 300g total), tart and crisp varieties like Granny Smith
  • 1-inch piece fresh ginger root, peeled and finely grated or sliced
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons honey or agave syrup (optional, adjust to taste)
  • 1 cup (240 ml) cold sparkling water
  • Ice cubes, for serving
  • A few sprigs of fresh mint leaves (optional, for garnish)

Instructions

  1. Wash and core the green apples. If using a juicer, extract about 1 cup (240 ml) of fresh apple juice. If using a blender, chop apples into small pieces, blend with 1/4 cup (60 ml) water until smooth, then strain through a fine mesh strainer for clear juice.
  2. Peel and grate or thinly slice the 1-inch piece of fresh ginger. For milder flavor, use less or strain out slices after steeping.
  3. In a mixing pitcher, combine 2 tablespoons (30 ml) fresh lemon juice and 1 to 2 tablespoons (15-30 ml) honey or agave syrup. Stir until the sweetener dissolves.
  4. Add the grated or sliced ginger to the lemon-sweetener mixture and let steep for 5-10 minutes to release flavor. For stronger ginger flavor, gently muddle the ginger before steeping.
  5. Pour the fresh green apple juice into the pitcher with the ginger-lemon syrup and stir gently to combine.
  6. Just before serving, add 1 cup (240 ml) cold sparkling water and plenty of ice cubes. Stir lightly to mix without losing fizz.
  7. Pour into tall glasses, garnish with fresh mint leaves or thin apple slices, and serve immediately.

Notes

Use fresh, crisp apples and fresh ginger for best flavor. Adjust sweetness gradually to balance tartness. Add sparkling water just before serving to maintain fizz. Leftover apple-ginger mix can be stored separately in the fridge for up to 24 hours. For a warm version, gently heat the apple-ginger infusion without sparkling water.
