  • 2 medium cucumbers, sliced or diced (English cucumbers preferred)
  • 1 cup cherry tomatoes, halved
  • ¼ small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup Kalamata olives, pitted and halved
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon red wine vinegar
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Wash and prep the vegetables: rinse cucumbers and cherry tomatoes under cold water. Slice cucumbers into half-moons or bite-sized chunks (about ½-inch pieces). Halve the cherry tomatoes. Thinly slice the red onion into rings or slivers.
  2. Optional: Soak the red onion slices in cold water for 5 minutes to mellow the flavor, then drain well.
  3. In a mixing bowl, combine cucumbers, cherry tomatoes, and red onion. Toss gently to mix without bruising the tomatoes.
  4. Add the pitted and halved Kalamata olives to the bowl.
  5. In a small bowl or measuring cup, whisk together extra virgin olive oil, fresh lemon juice, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.
  6. Pour the dressing over the salad ingredients and toss gently but thoroughly to coat evenly.
  7. Sprinkle the crumbled feta cheese on top and give the salad one final gentle toss or leave layered for presentation.
  8. Serve immediately for best freshness. If preparing ahead, keep dressing separate and toss just before serving.
