Ingredients

Scale
  • 2 ¼ teaspoons active dry yeast (one packet)
  • 1 cup warm whole milk (240 ml), warmed to about 110°F (43°C)
  • ¼ cup granulated sugar (50 g)
  • 1 large egg, room temperature
  • 4 tablespoons unsalted butter, melted and cooled (about 56 g)
  • 3 cups all-purpose flour (375 g), plus extra for dusting
  • 1 teaspoon salt
  • ½ cup unsalted butter, softened (about 113 g) for cinnamon butter spread
  • 2 tablespoons powdered sugar (15 g) for cinnamon butter spread
  • 1 teaspoon ground cinnamon for cinnamon butter spread
  • 1 teaspoon vanilla extract for cinnamon butter spread
  • Pinch of salt for cinnamon butter spread

Instructions

  1. Activate the yeast: In a small bowl, combine warm whole milk (110°F/43°C) with the sugar and yeast. Stir gently and let it sit for 5-10 minutes until foamy and bubbly.
  2. Mix wet ingredients: In a large bowl or mixer bowl, whisk the egg and melted butter until combined. Add the foamy yeast mixture and stir gently to blend.
  3. Add dry ingredients: Gradually add the flour and salt, mixing with a spoon or dough hook on low speed. Knead for about 8-10 minutes until smooth and elastic, adding flour if sticky.
  4. First rise: Lightly grease a clean bowl, place the dough inside, and cover with a kitchen towel or plastic wrap. Let it rise in a warm, draft-free spot for 1 to 1.5 hours until doubled in size.
  5. Shape the rolls: Punch down the dough and turn onto a floured surface. Divide into 12 equal pieces (~60 g/2 oz each). Roll each piece into a smooth ball and place close but not touching in a greased 9×13-inch baking pan.
  6. Second rise: Cover the pan and let the rolls rise for 30-40 minutes until puffy and nearly doubled.
  7. Bake: Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown. Tent with foil if browning too quickly.
  8. Butter finish: Immediately brush tops with melted butter after baking. Let cool slightly before serving.
  9. Prepare cinnamon butter: While rolls bake, mix softened butter, powdered sugar, cinnamon, vanilla extract, and a pinch of salt until smooth and creamy. Refrigerate until ready to serve.
  10. Serve warm: Slather rolls with cinnamon butter and enjoy.

Notes

Use warm milk at about 110°F to activate yeast properly. Knead dough until smooth and elastic for best texture. Brush rolls with melted butter immediately after baking for softness and shine. For dairy-free, substitute milk and butter with plant-based alternatives. Gluten-free flour blends can be used with adjusted rising times. Store rolls in airtight container at room temperature for up to 2 days or freeze for up to 3 months.
