  • 2 cups (240g) all-purpose flour, sifted
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons unsweetened cocoa powder (preferably Dutch-processed)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups (420ml) buttermilk (or dairy-free milk with 1 tbsp vinegar as substitute)
  • 2 large eggs, room temperature
  • 1/4 cup (60g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring (liquid or gel)
  • 4 oz (112g) cream cheese, softened
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons (30-45ml) milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron for 5-7 minutes.
  2. In a large bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, eggs, melted butter, vanilla extract, and red food coloring.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined; do not overmix.
  5. Lightly grease the waffle iron with non-stick spray or melted butter.
  6. Pour about 1/2 cup (120ml) of batter per waffle onto the iron. Close the lid and cook for 4-6 minutes until waffles are crisp and a toothpick inserted comes out clean.
  7. While waffles cook, beat the softened cream cheese with powdered sugar, milk, and vanilla extract until smooth and pourable. Adjust milk to desired consistency.
  8. Serve waffles immediately, stacked and drizzled generously with the cream cheese glaze.

Notes

Use room temperature eggs for better emulsification and fluffiness. Do not overmix the batter to avoid tough waffles. Preheat and grease the waffle iron well to prevent sticking. Adjust milk in the cream cheese drizzle for desired consistency. Batter can be refrigerated up to 24 hours but may lose some fluffiness.
