  • 2 ¼ tsp active dry yeast (one packet)
  • ¼ cup granulated sugar (50g)
  • 1 tsp salt
  • 1 cup whole milk, warmed to about 110°F (240ml)
  • ¼ cup unsalted butter, melted (56g) + extra for brushing
  • 1 large egg, room temperature
  • For honey cinnamon butter:
  • ½ cup unsalted butter, softened (113g)
  • 3 tbsp honey (60ml)
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Activate the yeast: In a small bowl, combine the warm milk (110°F/43°C) with the sugar and yeast. Stir gently and let it sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl or stand mixer, combine the flour and salt. Add melted butter, egg, and the activated yeast mixture. Mix until a shaggy dough forms.
  3. Knead the dough: Knead for 8-10 minutes until smooth and elastic. Dough should be slightly tacky but not sticky. Add flour if too wet, but sparingly.
  4. First rise: Lightly oil a clean bowl, place dough inside, cover with a kitchen towel, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Shape the rolls: Punch down dough, turn onto floured surface, divide into 12 equal pieces (~60g/2 oz each). Shape into smooth balls and place close together in a greased 9×13 inch pan.
  6. Second rise: Cover pan with towel and let rolls rise for 30-40 minutes until puffy.
  7. Bake: Preheat oven to 350°F (175°C). Bake rolls for 20-22 minutes until golden brown and hollow-sounding when tapped.
  8. Make honey cinnamon butter: Beat softened butter, honey, cinnamon, and salt until smooth and creamy.
  9. Butter the rolls: Brush rolls with melted butter as soon as they come out of the oven. Serve with honey cinnamon butter on the side or spread warm.

Notes

Use fresh yeast and warm milk at about 110°F for best rise. Knead dough for full 8-10 minutes to develop gluten. Cover dough with a damp towel during rising to prevent drying. Baking rolls close together creates soft sides; space apart for crustier edges. Honey cinnamon butter can be made ahead and stored in fridge; bring to room temperature before serving. Dough can be refrigerated overnight after first rise. Rolls can be frozen before or after baking.
