  • 3 large eggs, separated (room temperature preferred)
  • 3 tablespoons cream cheese, softened (Philadelphia recommended)
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs carefully, placing the whites in a clean, dry bowl and the yolks in another. Ensure no yolk gets into the whites.
  3. Beat the egg whites with an electric mixer on medium speed until soft peaks form (about 2-3 minutes). Gradually add the baking powder and continue beating until stiff peaks develop.
  4. In the other bowl, mix the egg yolks with the softened cream cheese until smooth and creamy.
  5. Gently fold the egg whites into the yolk mixture in batches using a spatula, folding carefully to keep as much air as possible.
  6. Drop 6 spoonfuls of the batter onto the lined baking sheet, spacing them about 2 inches apart. Shape slightly with the back of the spoon if desired.
  7. Bake for 25-30 minutes, or until the breads are golden on top and feel springy to the touch. Avoid opening the oven too early.
  8. Remove from oven and let cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

Use room temperature eggs for better volume. Whip egg whites to stiff but not dry peaks. Fold gently to keep air in the batter. Avoid opening the oven early to prevent collapsing. For dairy-free, substitute cream cheese with smooth dairy-free spread but texture may vary.
