A quick and healthy recipe featuring spicy ground turkey served in crisp lettuce leaves, perfect for light lunches or dinners with bold flavors and minimal carbs.

  • 1 lb ground turkey (450 g)
  • 1 head romaine or butter lettuce leaves
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp tomato paste
  • ¼ cup low-sodium chicken broth (60 ml)
  • 1 tbsp fresh lime juice
  • A handful fresh cilantro, chopped
  • Salt and pepper to taste
  • Optional toppings: diced avocado, shredded cheese, salsa, Greek yogurt

Instructions

  1. Gently separate the leaves from the head of romaine or butter lettuce. Rinse and pat dry with paper towels. Set aside.
  2. Place a large non-stick skillet over medium heat and add 1 tablespoon of olive oil. Warm for about 1 minute until shimmering.
  3. Add the finely chopped onion and cook for 3-4 minutes until softened and translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground turkey to the skillet. Break it apart with a wooden spoon and stir frequently, cooking for about 7-8 minutes until no longer pink and slightly browned.
  5. Sprinkle in chili powder, cumin, paprika, red pepper flakes (if using), salt, and pepper. Stir well to coat the meat evenly. Let spices toast for about 1 minute.
  6. Stir in 1 tablespoon tomato paste. Pour in ¼ cup low-sodium chicken broth and simmer for 3-4 minutes until liquid reduces slightly and forms a saucy coating.
  7. Remove skillet from heat. Squeeze fresh lime juice over the meat and stir in chopped cilantro.
  8. Spoon the spicy turkey mixture into each lettuce leaf. Top with optional diced avocado, shredded cheese, salsa, or Greek yogurt if desired.

Notes

Do not rush browning the turkey; let it sit a few seconds before breaking up to develop flavor. Toast spices briefly in the pan to unlock aroma. Add more broth if meat dries out. Fresh lime juice at the end brightens the dish and balances heat. Store turkey filling and lettuce separately for best freshness.
