Ingredients

Scale
  • 4 skin-on salmon fillets, about 6 ounces (170 grams) each
  • 4 cups broccoli florets (about 300 grams), washed and cut into bite-sized pieces
  • ½ cup (120 ml) teriyaki sauce (homemade or store-bought)
  • 2 tablespoons (30 ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 1 tablespoon toasted sesame seeds
  • 2 stalks green onions, thinly sliced
  • Salt and pepper, to taste
  • For homemade teriyaki sauce: soy sauce, honey or brown sugar, garlic, ginger, and a splash of rice vinegar

Instructions

  1. Preheat oven to 400°F (200°C).
  2. If making homemade teriyaki glaze, whisk together ½ cup soy sauce, 2 tablespoons honey, 1 teaspoon grated ginger, 2 cloves minced garlic, and 1 tablespoon rice vinegar in a small bowl. Set aside.
  3. In a mixing bowl, toss broccoli florets with 2 tablespoons olive oil, salt, and pepper until evenly coated.
  4. Line a large rimmed baking sheet (about 18×13 inches) with parchment paper or a silicone baking mat.
  5. Spread the broccoli in an even layer on one side of the sheet pan.
  6. Pat salmon fillets dry with paper towels. Brush each fillet generously with teriyaki glaze and place skin-side down on the empty side of the sheet pan.
  7. Roast in the oven for 12-15 minutes until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C), and broccoli is tender with crispy edges.
  8. Brush salmon with remaining teriyaki sauce halfway through cooking for extra flavor.
  9. Remove from oven and sprinkle toasted sesame seeds and sliced green onions over the top.
  10. Serve immediately for best texture and flavor.

Notes

Pat salmon dry before glazing to ensure crisp skin. Brush on a thin layer of teriyaki sauce to avoid burning sugars. Broil broccoli for last 2 minutes if you want extra crispiness, but watch closely to prevent burning. Do not overcrowd the pan to allow even roasting. Let salmon sit at room temperature for 10-15 minutes before cooking for even heat distribution.
