A quick and flavorful loaded nachos recipe perfect for game day snacks, featuring layers of seasoned beef, cheese, fresh veggies, and creamy toppings.

  • 8 cups (about 240 g) sturdy tortilla chips
  • 1 pound (450 g) ground beef (85% lean)
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 1 cup (170 g) canned black beans, rinsed and drained
  • 2 fresh jalapeños, sliced
  • 1 cup (150 g) diced fresh Roma tomatoes or 1 cup chunky salsa
  • 3 green onions, thinly sliced
  • 1 ripe avocado, sliced or mashed as guacamole
  • 1/2 cup (120 ml) sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Optional: fresh cilantro for garnish

Instructions

  1. Preheat your oven’s broiler to high and position the rack about 6 inches from the heat source.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spatula, until browned, about 6-8 minutes. Drain excess fat if needed.
  3. Stir in chili powder, cumin, smoked paprika, garlic powder, and salt to taste. Cook for another 2 minutes to let flavors meld.
  4. While the beef cooks, dice tomatoes, slice jalapeños, thinly slice green onions, and rinse and drain black beans.
  5. On a baking sheet, spread out tortilla chips in an even layer. Scatter the seasoned beef, black beans, tomatoes, jalapeños, and green onions evenly over the chips.
  6. Generously sprinkle shredded cheddar cheese over the toppings.
  7. Place the baking sheet under the broiler for 3-5 minutes until the cheese is melted and slightly golden. Watch closely to avoid burning.
  8. Remove from oven. Dollop with sour cream and add sliced or mashed avocado as guacamole. Garnish with fresh cilantro if desired.
  9. Serve immediately while hot and crunchy.

Notes

Use sturdy tortilla chips to prevent sogginess. Add creamy toppings like avocado and sour cream just before serving to keep chips crunchy. If no broiler is available, melt cheese in microwave but it won’t be crispy. Rotate pan halfway if broiler heats unevenly. For dairy-free, use vegan cheese and coconut-based sour cream. For vegetarian, substitute beef with sautéed mushrooms or plant-based crumbles.
