A quick and easy spring appetizer featuring toasted baguette slices topped with creamy herb butter and crunchy radishes, perfect for gatherings or a light snack.

  • 1 fresh baguette, sliced about 1/2-inch thick
  • 1/2 cup (115g) unsalted butter, softened
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh chives
  • Zest of 1 lemon
  • 810 small red radishes, thinly sliced
  • Pinch of sea salt (for seasoning butter)
  • Sprinkle of sea salt (for topping)
  • Freshly ground black pepper, to taste
  • Optional: edible flowers or microgreens for garnish

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
  2. Slice the baguette into 1/2-inch thick pieces, keeping them uniform.
  3. Arrange the slices in a single layer on the baking sheet. Bake for 8-10 minutes, then flip and toast another 6-8 minutes until golden and crispy but not too hard.
  4. While the bread is toasting, combine softened butter with chopped parsley, chives, lemon zest, sea salt, and freshly ground black pepper in a mixing bowl. Mix until smooth and fragrant.
  5. Thinly slice the radishes using a sharp knife or mandoline.
  6. Spread about 1 tablespoon (15g) of the herb butter on each warm baguette slice.
  7. Top each crostini with a few radish slices, layering to show off their vibrant color and crunch.
  8. Finish with a pinch of flaky sea salt and a crack of fresh black pepper. Add edible flowers or microgreens if desired.
  9. Serve immediately or within an hour for best crunch.

Notes

Soak radishes in cold water for 10 minutes before slicing to mellow heat if desired. Use room temperature butter for smooth spreading. Assemble crostini just before serving to keep bread crisp. Herb butter can be made up to 2 days ahead and refrigerated.
