A quick and easy keto-friendly recipe for crispy, tender ribs made in the air fryer using a flavorful dry rub. Perfect for busy nights, this recipe delivers a crunchy crust and juicy interior without the fuss of slow cooking.

Ingredients

Scale
  • 2 pounds baby back or spare pork ribs, trimmed
  • 1 tablespoon olive oil or avocado oil
  • 2 tablespoons paprika (smoked paprika optional)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt (adjust to taste)
  • 1 teaspoon chili powder
  • 1 teaspoon brown erythritol or monk fruit sweetener (optional)

Instructions

  1. Remove the membrane from the back of the ribs using a sharp knife and paper towel for grip (about 5 minutes).
  2. In a mixing bowl, combine paprika, garlic powder, onion powder, black pepper, sea salt, chili powder, and sweetener if using. Stir well to evenly distribute spices (2-3 minutes).
  3. Pat ribs dry with paper towels. Drizzle 1 tablespoon of oil over ribs and rub it in. Sprinkle dry rub generously over both sides, pressing into the meat. Let sit at room temperature for 10-15 minutes to absorb flavors (optional).
  4. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  5. Place ribs in a single layer in the air fryer basket, bone side down if possible. Cook for 25 minutes, flipping halfway through at 12-13 minutes. Ribs should be golden brown with crispy edges but juicy inside.
  6. Check internal temperature; it should reach at least 145°F (63°C) for safety, ideally around 190°F (88°C) for tenderness. Add 3-5 more minutes if you want crispier ribs, watching closely to avoid burning.
  7. Let ribs rest on a plate for 5 minutes before slicing between the bones to redistribute juices.

Notes

Remove the membrane for tender ribs and better dry rub penetration. Preheat the air fryer to ensure a crispy crust. Avoid overcrowding the basket to maintain air circulation. Rest ribs after cooking for juicy results. Optionally brush with melted butter or sugar-free BBQ sauce if ribs seem dry. Adjust spice levels to taste. Can cook in batches if needed.
