  • 1 cup walnut halves, toasted
  • 1/3 cup raw honey
  • 1/4 cup full-fat mayonnaise
  • 2 tablespoons sweetened condensed milk
  • 1 large egg white, room temperature
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • Vegetable oil for frying (about 2 cups)
  • 1 tablespoon fresh lemon juice (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Spread walnuts on a baking sheet and toast for 8-10 minutes until fragrant and lightly browned. Set aside to cool.
  2. In a small bowl, whisk together honey, mayonnaise, sweetened condensed milk, lemon juice (if using), and vanilla extract until smooth. Set aside.
  3. In a medium bowl, combine flour, cornstarch, and salt. Lightly beat the egg white until frothy. Add egg white to flour mixture and stir gently to create a smooth, slightly thick batter.
  4. Pat shrimp dry with paper towels and season lightly with salt.
  5. Dip each shrimp into the batter, ensuring even coverage. Let excess drip off.
  6. Pour vegetable oil into a pot or fryer to a depth of about 2 inches and heat to 350Β°F (175Β°C).
  7. Fry shrimp in batches for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels or a cooling rack.
  8. While shrimp are still warm, transfer to a large bowl. Add toasted walnuts and pour the honey glaze over. Gently toss until evenly coated.
  9. Serve immediately for best crunch and flavor. Optionally garnish with chopped green onions or sesame seeds.

Keep oil temperature steady at 350Β°F to avoid greasy or burnt shrimp. Dry shrimp thoroughly before battering to prevent soggy coating. Toss shrimp with glaze while warm for best adhesion. Glaze can be prepared a day ahead and refrigerated. For gluten-free, substitute all-purpose flour with almond flour. For dairy-free, use dairy-free mayo and coconut condensed milk.
