  • 1 pound fresh asparagus, trimmed
  • 3 large garlic cloves, minced
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: zest of 1 lemon
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the asparagus stalks and pat dry. Trim about 1-2 inches off the woody ends.
  3. In a large bowl, combine olive oil, minced garlic, salt, pepper, and optional red pepper flakes. Stir well.
  4. Add the trimmed asparagus to the bowl and toss until evenly coated with the garlic oil mixture.
  5. Arrange the asparagus in a single layer on a baking sheet.
  6. Roast for 12-15 minutes until tender yet crisp, shaking the pan or flipping the stalks halfway through.
  7. Remove from oven, sprinkle Parmesan evenly over the asparagus, and return to oven for 2-3 minutes to melt and crisp the cheese.
  8. Optionally, zest a lemon over the asparagus before serving. Serve immediately.

Notes

If garlic burns during roasting, reduce oven temperature or add garlic halfway through roasting. Use parchment paper or non-stick baking sheets to prevent sticking. For dairy-free, substitute Parmesan with nutritional yeast.
