These crispy air fryer loaded taquitos feature a creamy cream cheese filling combined with shredded chicken and cheese, delivering a crunchy, cheesy, and satisfying snack or meal that’s quick and easy to prepare.

Ingredients

Scale
  • 68 small flour or corn tortillas (68 inch size, fresh or thawed if frozen)
  • 8 oz softened cream cheese
  • 1 cup shredded cooked chicken or shredded beef
  • 1 cup shredded cheddar cheese or Mexican blend cheese
  • 2 tablespoons finely chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • Cooking spray or a light brush of oil
  • Optional: diced jalapeños or hot sauce for a spicy kick

Instructions

  1. Prepare the filling: In a mixing bowl, combine 8 oz softened cream cheese, 1 cup shredded cooked chicken, 1 cup shredded cheddar cheese, 2 tablespoons finely chopped green onions, 1/2 teaspoon garlic powder, 1/2 teaspoon chili powder, salt, and pepper to taste. Mix thoroughly until well blended (about 5 minutes).
  2. Warm the tortillas briefly in the microwave for 15-20 seconds or on a dry skillet for 30 seconds each side to prevent cracking when rolling.
  3. Assemble the taquitos: Spread about 2 tablespoons of the filling evenly on one side of each tortilla. Roll tightly from one edge to the other, tucking in the sides to keep the filling secure. Place each rolled taquito seam-side down on a plate (about 10 minutes).
  4. Preheat the air fryer to 400°F (200°C) and let it heat for 3-5 minutes.
  5. Lightly spray or brush the taquitos with cooking oil to promote crispness. Arrange them in a single layer in the air fryer basket, ensuring they don’t touch to allow air circulation. Cook in batches if necessary.
  6. Air fry the taquitos for 8-10 minutes, flipping halfway through, until golden-brown and crispy. Add 1-2 minutes if needed, watching closely to avoid burning.
  7. Remove from the air fryer and let cool for a minute or two before serving. Serve with salsa, guacamole, or sour cream for dipping.

Notes

Warm tortillas before rolling to prevent cracking. Lightly spray or brush taquitos with oil for crispiness. Flip halfway through cooking for even crisping. Avoid overcrowding the air fryer basket. Chill filling if too loose before assembling. For reheating, use air fryer at 350°F for 4-5 minutes to maintain crispness. Corn tortillas provide a gluten-free option.
