Ingredients

Scale
  • 2 pounds fresh chicken wings, split into flats and drumettes, skin-on
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • For the 8 Bold Flavors (choose your favorites or try all):
  • Buffalo Sauce: 1/4 cup classic hot sauce mixed with melted butter
  • Garlic Parmesan: 2 tablespoons grated Parmesan, 1 teaspoon minced garlic, sprinkle of fresh parsley
  • Honey Sriracha: 2 tablespoons honey, 1 tablespoon Sriracha
  • BBQ Rub: 1 teaspoon brown sugar, 1/2 teaspoon chili powder, 1/2 teaspoon cumin
  • Lemon Pepper: zest of one lemon, 1 teaspoon cracked black pepper
  • Chipotle Lime: 1 teaspoon chipotle powder, juice of half a lime
  • Ranch Seasoning: 2 tablespoons store-bought or homemade ranch dry mix
  • Sweet Chili: 3 tablespoons sweet chili sauce

Instructions

  1. Pat the wings dry with paper towels for 5 minutes to remove moisture.
  2. In a large bowl, mix baking powder, salt, pepper, garlic powder, and smoked paprika.
  3. Add the wings to the bowl and drizzle olive oil over them. Toss until wings are evenly coated.
  4. Preheat the air fryer to 375°F (190°C) for 5 minutes.
  5. Arrange wings in a single layer in the air fryer basket without overcrowding. Cook in batches if needed.
  6. Air fry wings at 375°F (190°C) for 25 minutes, flipping halfway through. Wings should be golden brown and reach an internal temperature of 165°F (74°C). Add 3-5 more minutes if needed.
  7. While wings cook, prepare your chosen bold flavor sauces or spice blends.
  8. Once cooked, transfer wings to a large bowl and toss thoroughly with your selected sauce or seasoning.
  9. Serve immediately while hot for best crispiness.

Notes

Pat wings dry thoroughly to ensure crispiness. Use baking powder (not baking soda) to help blister and crisp the skin. Avoid overcrowding the air fryer basket to allow even cooking. Flip wings halfway through cooking. For multiple flavor batches, keep cooked wings warm in a 200°F oven. If you don’t have an air fryer, bake wings at 425°F on a wire rack over a baking sheet for 40-45 minutes, flipping halfway. Adjust spice levels to taste. For dairy-free, substitute Parmesan with nutritional yeast or omit.
