These crispy air fryer buffalo chicken wings are quick, easy, and perfect for game day. They feature a spicy buffalo kick, creamy blue cheese, and fresh green onions for a delicious layered flavor.

Ingredients

Scale
  • 2 pounds chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • ½ cup blue cheese crumbles (about 75g)
  • 2 stalks green onions, thinly sliced
  • Ranch dressing (optional, for drizzling or dipping)
  • Celery sticks, for serving

Instructions

  1. Pat the chicken wings dry with paper towels to remove moisture (about 5 minutes).
  2. In a large bowl, toss wings with 1 tablespoon baking powder, 1 teaspoon salt, and ½ teaspoon black pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  4. Arrange wings in a single layer in the air fryer basket or tray, avoiding overcrowding. Cook in batches if needed (about 15 wings per batch).
  5. Air fry wings at 400°F (200°C) for 25-28 minutes, flipping halfway through at around 13 minutes, until golden-brown and crisp.
  6. While wings cook, melt 2 tablespoons unsalted butter and mix with ½ cup buffalo sauce until smooth.
  7. Transfer cooked wings immediately to the buffalo butter sauce and toss until evenly coated.
  8. Arrange wings on a serving platter and sprinkle with ½ cup blue cheese crumbles and sliced green onions. Drizzle ranch dressing if desired.
  9. Serve immediately with celery sticks on the side.

Notes

Pat wings dry thoroughly to ensure crispiness. Use baking powder, not baking soda, for best results. Avoid overcrowding the air fryer basket to allow proper air circulation. Flip wings halfway through cooking. Toss wings gently in sauce to avoid breaking skin. If wings aren’t crispy enough, add 2-3 extra minutes in the air fryer. Leftovers can be reheated in the air fryer at 375°F for 5-7 minutes to regain crispiness.
