Crispy Air Fryer Loaded Breakfast Casserole Bites

Quick and easy air fryer breakfast bites with a crispy outside and gooey inside, perfect for busy mornings and meal prep.

  • 6 large eggs, room temperature
  • ½ cup (120 ml) milk (whole or 2%)
  • 8 oz (225 g) breakfast sausage, cooked and crumbled
  • 1 cup (100 g) shredded cheddar cheese
  • ½ cup (75 g) diced bell peppers
  • ¼ cup (40 g) diced onions
  • 1 cup (150 g) frozen hash browns, thawed
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • Non-stick cooking spray

Instructions

  1. Cook the sausage in a skillet over medium heat until browned and cooked through, about 7 minutes. Drain excess grease and set aside.
  2. In a large mixing bowl, whisk together eggs and milk until smooth and slightly frothy, about 1-2 minutes.
  3. Stir in cooked sausage, shredded cheddar cheese, diced bell peppers, diced onions, thawed hash browns, salt, black pepper, and garlic powder. Mix evenly.
  4. Spray the air fryer basket or silicone muffin cups with non-stick spray. Fill each muffin cup about ¾ full with the mixture or shape spoonfuls into 2-inch rounds and place on a parchment-lined basket.
  5. Set air fryer to 350°F (175°C) and cook bites for 12-15 minutes, flipping halfway if making patties, until golden brown and firm (toothpick should come out clean).
  6. Let the bites rest for 2-3 minutes before removing. Serve warm.

Notes

Thaw and pat dry hash browns to avoid soggy bites. Do not overfill muffin cups or make bites too large for even cooking. Cooking times may vary by air fryer model. For gluten-free, use gluten-free sausage and hash browns. Can bake in muffin tin at 375°F for 20-25 minutes if no air fryer is available.
