  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon espresso powder (optional)
  • Pinch of sea salt
  • 12 tablespoons almond or oat milk (optional)

Instructions

  1. Cut 1 large ripe avocado in half, remove the pit, and scoop out the flesh into your blender or food processor bowl.
  2. Add 2 tablespoons unsweetened cocoa powder, 1/4 teaspoon espresso powder, and a pinch of sea salt to the avocado.
  3. Pour in 2 tablespoons pure maple syrup and 1 teaspoon vanilla extract.
  4. Pulse the ingredients until creamy and uniform, scraping down the sides with a spatula as needed. If too thick, add 1 tablespoon of non-dairy milk and blend again until smooth and creamy.
  5. Taste and adjust sweetness or chocolate intensity by adding more maple syrup or cocoa powder if desired, then blend briefly again.
  6. Spoon the mousse into two small ramekins or dessert cups and chill in the refrigerator for at least 30 minutes.
  7. Serve chilled, optionally garnished with fresh berries, cocoa nibs, or mint leaves.

Ensure the avocado is ripe but not mushy for the best texture. Scrape down the sides of the blender often to avoid lumps. Chilling the mousse for at least 30 minutes improves texture and flavor. Espresso powder is optional but enhances chocolate depth without coffee taste. Adjust sweetness to taste with maple syrup or natural sweeteners like stevia or monk fruit.
