Instructions

  1. Heat 1 tablespoon olive oil or butter in a skillet over medium-high heat.
  2. Add 4 cups of fresh corn kernels (or thawed frozen corn) and cook for 7-10 minutes, stirring occasionally, until kernels are golden brown and slightly charred.
  3. In a medium bowl, combine 1/2 cup mayonnaise, 1/2 cup sour cream, 2 tablespoons fresh lime juice, and 2 cloves minced garlic. Whisk until smooth and creamy.
  4. Add 1 teaspoon chipotle chili powder, salt, and black pepper to taste. Stir to combine evenly.
  5. Gently fold the roasted corn into the creamy mixture.
