  • 1/4 cup heavy cream
  • 2 ounces cream cheese, softened
  • 2 tablespoons finely chopped chives (optional)
  • Salt and freshly ground black pepper, to taste
  • Pinch of smoked paprika (optional)

Instructions

  1. Bring a large pot of salted water to a boil or set up a steamer. Add cauliflower florets and cook until very tender, about 10-12 minutes. Drain well and let excess water evaporate.
  2. While cauliflower cooks, melt butter in a skillet over medium heat. Stir frequently until butter foams and turns golden brown with a nutty aroma, about 3-5 minutes. Remove from heat and stir in minced garlic; let soften for 1 minute. Set aside.
  3. Transfer drained cauliflower to a food processor. Add cream cheese and heavy cream, then pulse until smooth and creamy. For chunkier texture, pulse less.
  4. Pour browned butter and garlic mixture into cauliflower mash. Add shredded cheese, salt, pepper, and smoked paprika if using. Pulse briefly or stir well to combine.
  5. Taste and adjust seasoning. Fold in chopped chives if desired. If mash is too thick, add a splash of heavy cream or warm water to reach desired consistency.
  6. Serve warm, spooned into bowls or onto plates.

Notes

Drain and dry cauliflower thoroughly after cooking to avoid watery mash. Brown butter gently over medium-low heat and watch closely to prevent burning. For chunkier texture, pulse less in the food processor or use a potato masher. Adjust salt gradually to avoid overpowering flavors. Add cheese last while mash is warm for perfect melting.
