A creamy, spicy, and cheesy keto-friendly buffalo chicken dip made with roasted cauliflower as a low-carb base. Perfect for game day snacks or quick indulgent treats.

  • 1 medium head cauliflower, cut into florets (about 4 cups)
  • 2 cups shredded cooked rotisserie chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ranch dressing
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread the cauliflower florets in a single layer on the baking sheet. Lightly spray or drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast the cauliflower for 20-25 minutes, flipping halfway, until tender and slightly golden on edges.
  4. Transfer the roasted cauliflower to a food processor or blender. Add the softened cream cheese, garlic powder, and onion powder. Blend until smooth and creamy, about 2-3 minutes, scraping down the sides as needed.
  5. In a large bowl, combine the cauliflower cream cheese blend with shredded chicken, buffalo sauce, ranch dressing, shredded cheddar, and mozzarella. Stir gently but thoroughly to combine. Taste and adjust salt or buffalo sauce if desired.
  6. Pour the mixture into an 8×8 inch oven-safe baking dish and spread evenly. Optionally sprinkle extra cheddar or mozzarella on top for a cheesy crust.
  7. Bake at 375°F (190°C) for 15-20 minutes until the dip is bubbly and golden on top.
  8. Remove from oven and sprinkle sliced green onions on top. Let the dip cool for 5 minutes before serving.

Notes

Roasting the cauliflower adds a nutty flavor and better texture than steaming. Blend in bursts and scrape sides often for smoothness. If dip is too thick, add a tablespoon of chicken broth or water. Let dip rest after baking to firm up for easier scooping. Garnish with fresh green onions for brightness.
