A rich, cheesy, and crispy keto-friendly chicken casserole featuring tender chicken, creamy cheese sauce, and crispy bacon. Perfect for quick weeknight dinners or meal prep.

  • 3 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 8 slices bacon, cooked crispy and crumbled (preferably thick-cut)
  • 8 oz cream cheese, softened
  • 1 Β½ cups shredded sharp cheddar cheese (about 150g)
  • 1 packet ranch seasoning or 2 tablespoons homemade ranch mix
  • Β½ cup sour cream (120ml)
  • 3 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder (optional)
  • Β½ teaspoon freshly ground black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Lightly grease a 9×13-inch casserole dish with butter or non-stick spray.
  2. Cook bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and crumble, reserving some for garnish.
  3. If using raw chicken breasts, cook thoroughly by boiling or pan-searing until no longer pink. Shred or dice into bite-sized pieces (about 3 cups).
  4. In a medium bowl, combine softened cream cheese, sour cream, ranch seasoning, garlic powder, and black pepper. Mix until smooth.
  5. Stir in shredded cheddar cheese and prepared chicken until evenly coated.
  6. Spread the creamy chicken mixture evenly in the greased casserole dish. Sprinkle crumbled bacon (reserve some for topping) and sliced green onions over the top.
  7. Bake uncovered for 20-25 minutes until bubbly and golden on top.
  8. Remove from oven, sprinkle reserved bacon and extra green onions on top. Let rest for 5 minutes before serving.

Notes

For extra crispiness, broil the casserole for 1-2 minutes at the end, watching carefully to avoid burning. Use rotisserie chicken for a shortcut. For dairy-free, substitute cream cheese and sour cream with coconut or cashew cream and use plant-based cheese. Adding steamed broccoli or cauliflower is a great keto-friendly veggie boost.
