  • 1 large boneless, skinless chicken breast (about 8 oz / 225 g), cut into bite-sized pieces
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 medium carrot, peeled and diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 3 tablespoons all-purpose flour (use gluten-free flour blend if needed)
  • 2 cups chicken broth
  • ½ cup whole milk or half-and-half (or almond milk for dairy-free)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and freshly ground black pepper, to taste
  • Dumplings:
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons cold unsalted butter, cubed
  • ⅓ cup whole milk (or dairy-free milk)

Instructions

  1. Chop the onion, carrot, celery, garlic, and chicken into bite-sized pieces (about 10 minutes).
  2. Heat 2 tablespoons of butter in a medium pot over medium heat. Add onions, carrots, and celery; cook for about 5 minutes until softened. Add garlic and cook for another minute, stirring constantly.
  3. Add diced chicken breast to the pot and cook until no longer pink on the outside, about 4-5 minutes.
  4. Sprinkle 3 tablespoons of flour over the chicken and vegetables. Stir and cook for 2 minutes to remove raw flour taste.
  5. Slowly pour in 2 cups chicken broth while whisking to avoid lumps. Add ½ cup milk or half-and-half. Stir in thyme, parsley, salt, and pepper. Bring to a gentle simmer and cook for about 10 minutes until slightly thickened. Add more broth or milk if too thick.
  6. In a mixing bowl, combine ½ cup flour, baking powder, and a pinch of salt. Cut in 2 tablespoons cold butter until mixture resembles coarse crumbs. Stir in ⅓ cup milk to form a soft dough; do not overmix.
  7. Drop small 1-inch dollops of dumpling dough onto the simmering stew. Cover pot with lid and cook for 12-15 minutes without lifting the lid.
  8. After 15 minutes, check that dumplings are fluffy and cooked through. Adjust seasoning with salt and pepper if needed.
  9. Serve warm immediately.

Notes

Do not lift the lid while dumplings cook to keep them light and tender. If broth thickens too much before adding dumplings, add a splash of broth or milk to loosen. Keep dumpling dough cold and handle gently to avoid tough dumplings. For gluten-free, use gluten-free flour blend and gluten-free baking powder. For dairy-free, substitute milk and butter with coconut milk and dairy-free butter alternative.
